Sugar Cookie Cake
Single-serve Sugar Cookie Cake
Dessert pizza? Cookie cake? Whatever you want to call it, can we all agree to bring back cookie decorating?
Ingredients:
- 2 teaspoons grass-fed butter, melted
- 1/4 teaspoon almond extract
- 1 tablespoon ground flaxseed
- 2 tablespoons water
- 2 teaspoons coconut sugar
- 1/3 cup Original ChiChi
- 1/8 teaspoon baking powder
Optional frosting: Greek yogurt and honey to taste.
Instructions:

Preheat your oven to 350°F (175°C) and grease a baking tin with a bit of butter or oil to prevent sticking.

In a small bowl, combine the melted grass-fed butter, almond extract, flaxseed and water. Then mix in your coconut sugar. Lastly, stir in your ChiChi and baking powder until a dough forms.
- Flatten the dough into your baking tin. Bake for about 15 minutes and let cool before topping with decorations of your choice.
