Raspberry Breakfast Bake

This Raspberry Breakfast Bake is the ultimate morning treat, packed with wholesome ingredients and bursting with flavor. Featuring ChiChi’s Maple Syrup hot cereal, this easy-to-make bake combines sweet cherries, chia seeds, and a peanut butter oat base for a filling and satisfying breakfast.

Ingredients:

  • 1 package of ChiChi Maple Syrup hot cereal
  • 1 banana, mashed
  • 1 tsp vanilla bean paste
  • 2 tbsp brown sugar
  • 2 tbsp peanut butter
  • 1 tsp baking powder
  • 5 tbsp oat milk
  • 1 tsp salt
  • 1.5 cups frozen cherries
  • 1 tsp vanilla bean paste
  • 1 tbsp chia seeds

Directions:

  1. In a small saucepan, cook the cherries, vanilla bean paste, and chia seeds for 10-15 minutes until the fruit releases liquid. Mash slightly and let stand for 10 minutes.
  2. In a bowl, mix the remaining ingredients to form a dough.
  3. Grease a small cast iron pan and press half the dough into the bottom to form a layer.
  4. Spread the cherry compote over the dough layer, then top with remaining dough, pressing it into small, flat balls.
  5. Preheat the oven to 350°F and bake for 20 minutes. Let it cool for 5 minutes.
  6. Serve with a dollop of yogurt and enjoy!
