Mediterranean Chickpea and Olive Galette

The Perfect Summer Meal

Featuring ChiChi hot chickpea cereal as the dough and Freestyle Snacks Kalamata Olives. Feta, olives, truffle oil...do I need to continue?

Ingredients:

For the dough:

  • 1/3 cup Original ChiChi
  • 1/3 cup Greek Yogurt
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt

Instructions:

  1. Prepare your dough: Combine all of your dough ingredients in a small mixing bowl until it resembles a dough like texture. Add more ChiChi or yogurt as necessary until the dough is moist, yet doesn't stick to the touch.
  2. Form your crust: Flatten your dough into a non-stick baking dish or onto parchment paper. 
  3. Top and bake: Add your crumbled feta, sliced tomatoes, and kalamata olives, spreading evenly over the crust. Finish with a drizzle of oil and bake at 350F for 20-25 minutes.
