Mediterranean Chickpea and Olive Galette
The Perfect Summer Meal
Featuring ChiChi hot chickpea cereal as the dough and Freestyle Snacks Kalamata Olives. Feta, olives, truffle oil...do I need to continue?
Ingredients:
For the dough:
- 1/3 cup Original ChiChi
- 1/3 cup Greek Yogurt
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
Toppings:
- 3 tbsp crumbled feta
- 4 cherry tomatoes, sliced
- Freestyle Snacks Kalamata Olives, sliced
- 2 tsp truffle or olive oil (optional)
Instructions:
- Prepare your dough: Combine all of your dough ingredients in a small mixing bowl until it resembles a dough like texture. Add more ChiChi or yogurt as necessary until the dough is moist, yet doesn't stick to the touch.
- Form your crust: Flatten your dough into a non-stick baking dish or onto parchment paper.
- Top and bake: Add your crumbled feta, sliced tomatoes, and kalamata olives, spreading evenly over the crust. Finish with a drizzle of oil and bake at 350F for 20-25 minutes.
