Chocolate Covered Banana Bites
ChiChi Chocolate Banana Bites:
Bite-sized goodness.
Ingredients:
- 1/4 cup Banana Bread ChiChi
- 1/2 cup water or plant-based milk
- 1 tablespoon peanut butter
- 1/4 cup vegan chocolate chips
- 1 teaspoon coconut oil
- Ripe bananas, sliced
Instructions:

Prepare the Banana Bread ChiChi Mixture: In a bowl, cook the Banana Bread ChiChi with your liquid of choice and then stir in your peanut butter until well combined. Set aside.

Slice the banana and prep your chocolate: Peel the ripe banana and cut it into slices, about 1/2 inch thick. In a microwave-safe bowl, combine the chocolate chips and coconut oil and microwave in 30-second intervals, stirring in between, until melted and smooth.

Assemble the Banana Bites:
- Line a baking sheet with parchment paper.
- Using a spoon, place a dollop of melted chocolate onto the parchment paper.
- Top each chocolate dollop with a banana slice.
- Spoon a small amount of the ChiChi mixture on top of each banana slice.
- Drizzle more melted chocolate over the ChiChi mixture to cover it completely.

Freeze and Enjoy: Place the baking sheet in the freezer for about 10 minutes, or until the chocolate hardens. Then serve and enjoy!
