Ingredients:

For the Muffins:

  • 1/2 cup milk of choice
  • 2 tsp vinegar
  • 1 tsp pure vanilla extract
  • 1 1/2 tbsp oil
  • 1 cup Maple Syrup ChiChi
  • 1/4 cup coconut sugar
  • 2 tsp baking powder
  • Dash of salt

For the Streusel Topping:

  • 2 tbsp flour (almond flour can be used)
  • 2 tbsp coconut sugar
  • 1 1/2 tbsp Maple Syrup ChiChi
  • 2 tbsp oil

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. Combine milk and vinegar in a large bowl and let sit for 10 minutes to create a buttermilk-like consistency.
  3. Whisk together milk-vinegar mixture with vanilla extract, and oil.
  4. Mix in Maple Syrup ChiChi, coconut sugar, baking powder and salt.
  5. Fill muffin tins three-quarters full with batter.
  6. For the streusel topping, mix flour, coconut sugar, ChiChi, and oil until crumbs form. Sprinkle evenly over batter.
  7. Bake for about 20 minutes until muffins are golden brown.
  8. Let muffins cool in tin for a few minutes, then transfer to a wire rack to cool completely.
