Homemade Blueberry Pop Tarts
Ditch the store-bought version—these homemade blueberry pop tarts are gluten-free, high-protein, and naturally sweetened with monk fruit! Made with ChiChi oats, they’re crispy on the outside, fruity on the inside, and topped with a creamy blueberry glaze.
Ingredients
✨ Dough: ⅔ cup ChiChi oats (blended into flour), 3 tbsp sugar of choice, pinch of salt, 2 tbsp melted butter, 1 tbsp Greek yogurt, splash of vanilla
🍇 Filling: Blueberry jam
🎨 Topping: Greek yogurt + blueberry jam + sprinkles
How to Make Them
1️⃣ Preheat oven to 350°F (180°C).
2️⃣ Mix oat flour, sweetener, salt, butter, yogurt, and vanilla into a dough. Chill for 10 min.
3️⃣ Roll dough between parchment paper, cut into rectangles.
4️⃣ Add blueberry jam to half the rectangles, top with remaining pieces, seal edges with a fork.
5️⃣ Brush with egg, bake 15-18 min until golden.
6️⃣ Let cool, spread Greek yogurt + blueberry jam, and top with sprinkles.
