These mini apple pie cups are the perfect fall-inspired treat—naturally sweet, protein-packed, and ready in under 30 minutes. The crust is made with ChiChi’s Apple Cinnamon oats, so you get all the cozy flavor of apple pie in a bite-sized, better-for-you version.

Ingredients

Crust

  • 1 egg white

  • 2 tbsp maple syrup

  • 2 tbsp peanut butter

  • 1/3 cup oat flour (or almond flour for gluten-free)

  • 1/3 cup ChiChi (Apple Cinnamon flavor)

  • 2 tsp sugar

  • 1/2 tsp cinnamon

Caramelized Apples

  • 1 apple, diced

  • 1 tbsp maple syrup

  • 1/2 tsp sugar

  • 1/2 tsp cinnamon

  • 1/2 tsp vanilla extract

  • 2 tbsp water

Instructions

  1. Make the crust: Preheat oven to 180°C (350°F). Mix all crust ingredients until combined. Press into silicone muffin molds to form little cups.

  2. Bake: Bake for 10–12 minutes or until firm. Let cool.

  3. Cook the apples: In a small pan, heat diced apples, maple syrup, sugar, cinnamon, vanilla, and water until soft and caramelized (5–7 mins).

  4. Assemble: Fill each cup with warm apples, top with vanilla ice cream, and enjoy while gooey and warm!
