Simple Protein Peanut Butter Dipped Cookies

If you’re craving a treat that’s both indulgent and wholesome, these Peanut Butter Dipped Cookies are a must-try. Made with ChiChi’s chickpea hot cereal, almond flour, and sweetened with maple syrup, these cookies are the perfect blend of nutty, chewy, and chocolatey goodness.

Ingredients:

  • 3/4 cup runny peanut butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup ChiChi chickpea hot cereal (any flavor)
  • 1/2 cup almond flour
  • 2 tbsp water
  • 1/2 cup chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the peanut butter, maple syrup, vanilla extract, and salt until smooth.
  3. Add in the ChiChi chickpea hot cereal, almond flour, and water. Stir until a dough forms.
  4. Roll the dough into balls and place them on the prepared baking sheet. Flatten each ball slightly with a fork.
  5. Bake for 10-12 minutes, or until the edges are golden.
  6. While the cookies cool, melt the chocolate chips in the microwave in 15-second increments, stirring between each until fully melted.
  7. Once the cookies have cooled, dip each one halfway into the melted chocolate. Place them on a parchment-lined plate and refrigerate for about 10 minutes, or until the chocolate solidifies.
