Simple Protein Peanut Butter Dipped Cookies

Ingredients:
- 3/4 cup runny peanut butter
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup ChiChi chickpea hot cereal (any flavor)
- 1/2 cup almond flour
- 2 tbsp water
- 1/2 cup chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the peanut butter, maple syrup, vanilla extract, and salt until smooth.
- Add in the ChiChi chickpea hot cereal, almond flour, and water. Stir until a dough forms.
- Roll the dough into balls and place them on the prepared baking sheet. Flatten each ball slightly with a fork.
- Bake for 10-12 minutes, or until the edges are golden.
- While the cookies cool, melt the chocolate chips in the microwave in 15-second increments, stirring between each until fully melted.
- Once the cookies have cooled, dip each one halfway into the melted chocolate. Place them on a parchment-lined plate and refrigerate for about 10 minutes, or until the chocolate solidifies.
