High-Protein Blueberry Breakfast Loaf
This blueberry breakfast loaf combines the heartiness of oats with the protein boost of Original ChiChi, creating a nutritious and satisfying start to your day. It’s moist, flavorful, and perfect for breakfast or snacking!
Ingredients:
- 1 cup Original ChiChi
- 3/4 cup rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 large eggs
- 1/3 cup plain Greek yogurt
- 1/3 cup nut butter
- 1/3 cup granulated sugar
- 1/4 cup milk
- 1 cup fresh or frozen blueberries
Instructions:
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Combine ChiChi, oats, baking powder, baking soda, salt, and cinnamon in a bowl.
- Whisk together eggs, Greek yogurt, nut butter, sugar, and milk in a separate bowl.
- Mix the wet and dry ingredients until combined, then gently fold in the blueberries.
- Pour batter into the loaf pan and bake for 40-45 minutes, or until a toothpick comes out clean.
