High-Protein Blueberry Breakfast Loaf

This blueberry breakfast loaf combines the heartiness of oats with the protein boost of Original ChiChi, creating a nutritious and satisfying start to your day. It’s moist, flavorful, and perfect for breakfast or snacking!

Ingredients:

  • 1 cup Original ChiChi
  • 3/4 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 large eggs
  • 1/3 cup plain Greek yogurt
  • 1/3 cup nut butter
  • 1/3 cup granulated sugar
  • 1/4 cup milk
  • 1 cup fresh or frozen blueberries

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Combine ChiChi, oats, baking powder, baking soda, salt, and cinnamon in a bowl.
  3. Whisk together eggs, Greek yogurt, nut butter, sugar, and milk in a separate bowl.
  4. Mix the wet and dry ingredients until combined, then gently fold in the blueberries.
  5. Pour batter into the loaf pan and bake for 40-45 minutes, or until a toothpick comes out clean.
