Apple Pie Protein Bar
These Apple Pie Protein Bars are the perfect blend of sweet and satisfying, with a protein boost from chickpea oats and your favorite protein powder. Whether you need a quick breakfast or a post-workout snack, these bars are packed with nutrients and taste just like apple pie!
Ingredients:
- 1 ⅔ cups Apple Pie chickpea oats
- 1 ½ servings of your preferred protein powder
- ½ cup nut butter (almond or peanut)
- ⅓ cup honey or maple syrup
- 1 tsp vanilla extract
- ¼ cup dark chocolate chips (optional)
- ½ tsp baking powder
- 1-2 tbsp milk or water (for moisture)
Directions:
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large bowl, combine the chickpea oats, protein powder, and baking powder.
- In another bowl, mix the nut butter, honey (or maple syrup), vanilla extract, and milk or water until smooth.
- Combine the wet and dry ingredients, stirring until well mixed. Fold in chocolate chips if using.
- Press the mixture into the prepared baking dish and bake for 12-15 minutes, until the edges turn golden.
