These Apple Pie Protein Bars are the perfect blend of sweet and satisfying, with a protein boost from chickpea oats and your favorite protein powder. Whether you need a quick breakfast or a post-workout snack, these bars are packed with nutrients and taste just like apple pie!

Ingredients:

  • 1 ⅔ cups Apple Pie chickpea oats
  • 1 ½ servings of your preferred protein powder
  • ½ cup nut butter (almond or peanut)
  • ⅓ cup honey or maple syrup
  • 1 tsp vanilla extract
  • ¼ cup dark chocolate chips (optional)
  • ½ tsp baking powder
  • 1-2 tbsp milk or water (for moisture)

Directions:

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, combine the chickpea oats, protein powder, and baking powder.
  3. In another bowl, mix the nut butter, honey (or maple syrup), vanilla extract, and milk or water until smooth.
  4. Combine the wet and dry ingredients, stirring until well mixed. Fold in chocolate chips if using.
  5. Press the mixture into the prepared baking dish and bake for 12-15 minutes, until the edges turn golden.
