Vegan Peppermint Brownies

Ingredients:
- 1/2 cup milk
- 3 tablespoons flax meal
- 1 teaspoon vanilla extract
- 3/4 cup coconut sugar (or packed light brown sugar)
- 1/3 cup oil
- 2/3 cup (78 g) unsweetened cocoa powder
- 2/3 cup ChiChi
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 candy cane, crushed
Instructions:
- Prepare the Flax Mixture: In a small bowl, mix the milk, vanilla, and flax meal. Let it sit for 5 minutes to thicken.
- Mix the Batter: In a large bowl, combine the flax mixture with the coconut sugar, oil, cocoa powder, ChiChi, baking powder, and salt. Stir until the batter is smooth and well combined.
- Assemble: Pour the batter into an 8-inch baking pan, spreading it evenly. Sprinkle the crushed candy cane on top.
- Bake: Bake at 325°F for 20–25 minutes, or until the brownies are set and a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow the brownies to cool completely before slicing.
