  • 2 cups cooked chickpeas, drained, rinsed, and patted dry
  • 1 cup unsweetened shredded coconut
  • 1 cup chopped nuts of your choice (e.g., almonds, walnuts, or pecans)
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 cup dark chocolate chips or cacao nibs (optional)

  1. Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the chickpeas, shredded coconut, and chopped nuts.
  3. In a separate smaller bowl, whisk together the unsweetened cocoa powder, honey or maple syrup, melted coconut oil, vanilla extract, and salt until smooth.
  4. Pour the wet ingredients over the chickpea mixture and stir until everything is evenly coated.
  5. Spread the granola mixture onto the prepared baking sheet in a single layer, making sure the chickpeas are not clumped together.
  6. Bake for 25-30 minutes, stirring every 10 minutes to ensure even cooking. The granola is done when the chickpeas are slightly crisp and the mixture is fragrant.
  7. Remove from the oven and let the granola cool completely on the baking sheet. It will become crunchier as it cools.
  8. Once cooled, stir in the dark chocolate chips or cacao nibs if desired.
  9. Store the granola in an airtight container at room temperature for up to 2 weeks.
