Healthy Nutter Butter Cookies
These peanut butter sandwich cookies are soft, chewy, and secretly packed with protein—made from our Original ChiChi chickpea hot cereal. No refined flour, no added oils, just real ingredients that taste like dessert.
Each sandwich cookie is about 60 calories and comes together in minutes. They’re the kind of snack you’ll want to keep in the fridge for every craving.
Makes 6 small sandwich cookies
Cookie Ingredients:
– ½ cup Original ChiChi oats
– 1 tbsp peanut butter powder (or ½ tbsp natural peanut butter)
– 1 tbsp unsweetened applesauce (or Greek yogurt)
– 1 tbsp maple syrup or honey
– ¼ tsp vanilla extract
– ¼ tsp baking powder
– Pinch of salt
– 1 tbsp unsweetened almond milk (if needed)
Filling:
– 1 tbsp peanut butter powder + 1 tbsp water (or ½ tbsp natural peanut butter)
– ½ tsp maple syrup or honey (optional)
Instructions:

Preheat oven to 350°F (175°C).

Mix dry ingredients, then stir in wet ingredients to form a dough.

Shape into 12 small cookies and bake for 8–10 minutes. Let cool completely.

Mix filling and spread on 6 cookies. Top with the remaining cookies.
